Puffy Pancakes

This is my kids all-time favorite breakfast. They call them puffy pancakes but really, the recipe is for individual baked pancakes from the Newcastle Inn cookbook. The pancakes come out of the oven gloriously puffy and majestic and then start to deflate immediately. It is crucial to make sure everyone you want to impress is seated at the table before you pull them out of the oven. I do not make individual pancakes - instead I times the recipe by 4 and bake them in two cake pans.

Individual Baked Pancakes

3 eggs
1/2 cup milk
1/2 cup flour
pinch salt
2 tablespoons unsaled butter, melted

Whisk eggs and milk until well blended. Add the flour and the salt, whisk well (batter will look lumpy). Add the butter and whisk again! Pour into greased ramekins or if you are making 4 times the recipe into two cake pans. Bake at 450 for 15 minutes.

You must, must, must serve these with REAL maple syrup or you cannot be my friend.

  2. This is Ann's all time Christmas breakfast, except we don't eat it with syrup. Instead, while the pancakes are still hot, you spread vanilla yogurt and sprinkle brown sugar (goodly amount) so it melts. Then you top the puffy pancake with all the various fruit. My favorite is the mixed berries (you can use the ones they sell frozen in the grocery store, defrosted) and banana wheels. They taste really good that way.

  4. My mom calls these dutch babies and we eat them with lemon juice and powdered sugar. Yummo!
