Christmas Desserts

Ooops, one more Christmas post. These are the two desserts I made for Christmas dinner. They are both in the holiday baking issue of Better Homes and Gardens.

The first is a Cherry Almond Tart. The dough is rather hard to work with as it tends to break - especially when frozen, so good luck on the lattice bit. Also, the recipe must have a misprint. It calls for a 12 ox can of cherry filling, but it needs more like 1 1/2 cans of the 21 oz filling! It is very tasty - especially the almond dough, though I might add a hint of almond extract to the dough next time. I made it in a circle tart pan as I do not own a square one - yet.


The second is a Caramel-Toffee Cheesecake. Um, yummy. It is simple to make and really good. I finally overcame my fear of caramel and made the thick caramel that is poured over the top of the cheesecake. The caramel would be fabulous over ice cream and it was pretty easy to make. On the top, I broke up Skor bars and made a circle on the caramel.

  2. I love Skor bars!! They are my absolute favorite! Can you send one my way?? On second thought maybe you should hold off since I need to wear a wedding dress later this year.
