4th of July Sparkles



We found a new place to watch the fireworks this year. Less people, great view and lot of friends. The Littlefield's brought sparklers for all of the kids - some were impressed, some were scared and a few wanted nothing to do with them. My kids were definitely in the impressed category.

Luscious Ladies Weight Loss


I made this cake on Sunday for a 4th of July BBQ. Almond cake, fresh lemon curd and berries - this is just a reminder that this was a holiday week and it was tough, tough, tough to stick to a diet plan.

Here are our first week results:

Heather - Lost 1 pound
Karen - Lost 1 pound
April - Lost 1.6 pounds
Mary - No weight loss
Kirstin - Lost 0.8 pound
Kelly - Lost 2.5 pounds
Caroline - Lost 1 pound
Stacey - Lost 3.0 pounds

Pool Party and BBQ


On Saturday after the parade, we met up with friends for a BBQ/Pool Party at the Baker's home (which I have decided is in fact, my dream home). My kids had so much fun in the pool - we had to drag them out in order to have dinner. The food was amazing - I tried a new recipe which I will have to make again and take photos for the blog (a roasted vegetable dish with fig goat cheese), Mercedes made a green salad with cantaloupe and mint and also brought pomegranate sorbet that was really delicious. There was homemade guacamole and burger and hot dogs, watermelon and corn on the cob, cupcakes with fresh whipped cream and berries and Orangina to drink. So good and so much fun!

And now I'm hungry.

4th Parade on the 3rd


The Eagan Parade was Saturday morning and this year we met up with friends from church and found a spot at the beginning of the parade route. We wore red, white and blue and the kids perched on the curb waiting for the candy and water bottles thrown into the crowds during the parade. We cheered Emily as she marched by in the Eagan High School Band and my kids accepted every political sticker offered to them. It was HOT, but really fun this year.

On the River


On Friday, I took the kids down to Minnehaha Falls for a few hours of playing in the river. The walk down to the river is still under construction as the city tries to reverse the effects of erosion on the banks above the walking path, but it is a short hike to the swimming hole. We packed a lunch and swimming suits and enjoyed a beautiful morning on the river.


The scenery just kept getting better and better . . . why hello there random guy's abs . . .
